Gluten Free Pumpkin Bread

My recipe for gluten-free pumpkin bread.

Makes 2 Loaves | Bake Time: Approx 1 Hour

Dry Ingredients

  • 2 1/2 cups white rice flour
  • 1/2 cup cornstarch
  • 5 teaspoons pumpkin pie spice
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 teaspoon xanthan gum

Wet Ingredients

  • 4 large eggs
  • 1 cup vegetable oil
  • 1/2 cup orange juice
  • 3 cups granulated sugar
  • (1) 15oz can pumpkin

Instructions

  • Whisk together dry ingredients
  • In separate bowl combine wet ingredients
  • Add wet ingredients to dry and mix until combined
  • Pour into pans (I use non-stick spray to prep pans)
  • Bake 1 hour at 350F or until done. (Don’t preheat if using handmade pottery pans).
